From tank to table: the story behind Osetra Caviar

Just a few miles from 34° North Restaurant is Marshallberg Farm, the largest producer of Russian Sturgeon and Osetra Caviar in North America. It has the capacity to annually produce 5-7 tons of caviar and 80 tons of raw sturgeon meat.

Marshallberg Farm is not your ordinary farm. This is an aquaculture farm. There are around 40,000 Russian sturgeon — an endangered species — being raised sustainably in a recirculating aquaculture system, or RAS, for its meat and caviar, called osetra.

Marshallberg Farm is located on Core Sound near Cape Lookout on the Atlantic Ocean, about 12 miles east of Beaufort, North Carolina. The farm raises sturgeon in 40 indoor RAS tanks in two buildings of about 54,000 sq-ft in total. It also operates a 6,200 sq-ft processing building including five cold rooms, totaling 1,800 sq-ft, at various temperatures.

The farm adheres to U.S. environmental standards, proudly producing superior quality Osetra malossol caviar and sturgeon meat through sustainable aquaculture of Russian sturgeon (Acipenser gueldenstaedtii). Their American caviar is pure, containing only sea salt and the finest hand selected Russian Sturgeon roe.

Since the opening of the restaurant, Executive Chef Stephan Jordan has featured locally produced Marshallberg Osetra Caviar on the dinner menu at 34° North Restaurant.

“The texture of Russian sturgeon is comparable to pork tenderloin or veal.” according to Jordan.

“We think our guests will enjoy this unique international dish that comes just a few miles down the road from the restaurant,” he said.

You don’t have to wait until National Caviar Day on July 18 to enjoy it. You’ll find it available nightly at 34° North Restaurant as one of the many ways we support our local fishermen and farmers.
